About SourceWater

SourceWater is a celebration of Japanese cuisine with the utmost respect paid to centuries of craftsmanship and tradition. We will present Japanese seafood alongside the best Japanese and local produce we can source to create a small, focused menu which reflects the ever-changing seasons and micro-seasons of Japan and our region.

Merging the hospitality cultures of Japan and Tennessee, the open kitchen serves as the centerpiece of the dining room and harkens back to gathering around the central fireplace in traditional Japanese homes, inviting guests to participate and interact with the culinary team across the kitchen counter.

The menu will be a continuously-evolving selection of 8 to 10 dishes highlighting in-season seafood from the fish markets of Japan alongside Japanese and local produce. These dishes will span the traditional Japanese cooking categories: Raw, Grilled, Simmered, Broiled, Fried, and Sweets. Special attention will be paid to product quality, sourcing location, and technique. Offerings will change to reflect unique ingredients that may only be available for days at a time, the changing of seasons, and the traditions of Japan and Tennessee. We see these items as inspiration rather than strict constraints; we are, after all, in the southeastern United States, where produce is abundant and beautiful, and we will often integrate the bounty of our area.
